Ingredients
1 avocado lightly mashed
2 slices multigrain bread
1 egg, hardboiled & diced
6 oz shredded brussels sprouts
6 oz garbanzo beans
1 oz feta cheese
1 oz extra virgin olive oil
1 tsp paprika
1 tsp salt/pepper
Directions
Toast bread until golden brown
Lightly mix extra virgin olive oil, salt/pepper and avocado in a mixing bowl
Lightly fry garbanzo beans in vegetable oil for an extra crunch
Do a quick sauté on the Brussels sprouts with light extra virgin oil
Build avocado toast in the following order: Bread, avocado toast, garbanzo beans, diced eggs, Brussels sprouts, feta cheese, paprika sprinkle.
Drizzle of extra virgin of olive oil (optional) and enjoy.
