Ingredients

  • 1.5 lb Cobia

  • 3oz papaya diced

  • 1 avocado diced

  • 2 oz bell peppers diced (mixed colors)

  • 1 tbsp chopped cilantro

  • 1 tbsp chopped mint

  • 1 oz lemon juice

  • 1 oz orange juice

  • 1 oz olive oil

  • 1 lb taro root

  • 2 tbsp olive oil

  • Salt and pepper

Directions

  1. Cook fish in medium pan over medium heat. 

  2. Sear cobia 3 mins per side. 

  3. Peel and boil taro root until soft. 

  4. Strain water, add butter and milk. 

  5. Add salt and pepper and mash. 

  6. For the relish, combine papaya, avocado, bell peppers, herbs, lemon juice and olive oil. 

  7. Season with salt and pepper to taste.

Makes 4 servings.
