Ingredients
1 zucchini (cut half moons)
1 yellow squash (cut half moons)
1 jumbo carrot (julienne)
1 cup edamame
4 silver-dollar mushrooms (fine sliced)
1/2 avocado (diced)
2 cups jasmine rice
2 cups water
14 oz coconut milk
2 oz vegetable oil
Salt/pepper
Poke sauce
6oz cubed Ahi tuna
1 tsp toasted tuxedo sesame seeds
Directions
Combine rice, coconut milk, vegetable oil, salt/pepper and water in a pot then mix and cook until rice is full cooked.
Saute all vegetables (except avocado) in some olive oil and then glaze them with the poke sauce
Season cubed ahi tuna with poke sauce
Plate in the following order: Jasmine rice, stir fried vegetables, seasoned tuna, sprinkle sesame seeds all over the dish and place avocado around the outside of the rice
Serve and enjoy!
